第(1)个，缩略成in holiday，你就会明白是语法错误了。
第(2)个，是谁杜撰的呢?或者是否是受到了on Monday/Tuesday的影响呢?
我们一般说in/during a/the/my/their winter holiday/vacation强调的是“在一个时段内”，类似的有 in the evening, in August, in summer, in 2017。
而on holiday (US English: on vacation)是固定词组，强调的是off work / not at work / free from work / travelling when not working. 或者可以这么理解：on holiday的“动词性”很强，翻译成“在度假”。
其他的搭配还有使用单数名词和不同介词的，比如I will take a paid/long holiday this winter. What's your plan for your winter holiday?等。
如果假期比较长，BrE常使用holidays。如词典例句：
